Pineapple Upside-Down Pudding Recipe

Ingredients

  • Butter – 165 gms
  • Soft dark brown sugar – 25 gms
  • Canned pineapple – 4 slices
  • Glacé cherries, halved - 4
  • Caster sugar – 100 gms
  • Eggs - 2
  • Self-raising flour, sifted – 100 gms

Preparation Method

    Preparation Time - 15 minutes | Cooking Time - 9 minutes + Standing

    Microwave Setting - 100% (Full)

  1. Use 15 gms of the butter to grease a 20cm (8 inch) loose-bottomed cake dish.
  2. Place 25 gms of the butter and the brown sugar in the dish and cook for 1 minute.
  3. Arrange the pineapple slices and cherries in the base of the dish in a decorative pattern.
  4. Beat the remaining butter and caster sugar together until light and fluffy.
  5. Beat in the eggs and fold in the flour. Gently spread this over the fruit.
  6. Cook for 3 minutes, turn the dish round and cook for further 4—5 minutes.
  7. Leave the pudding to stand for 3 minutes before turning out.
