Spring Vegetable Medley Recipe

Ingredients

  • Onion, peeled, finely sliced - 1
  • Yellow pepper, cored, seeded and finely sliced - 1
  • Bulb fennel, trimmed, sliced – ½
  • Potato, peeled and diced - 1
  • Carrot, peeled, finely sliced - 1
  • Cauliflower florets – 100 gms
  • Garlic cloves, peeled and crushed - 2
  • Fresh parsley, chopped – 1 TeaSpoon
  • Tomato purée – 1 TableSpoon
  • Plain flour – 25 gms
  • Hot chicken or vegetable stock – 450 ml
  • Salt – to taste
  • Freshly ground black pepper parsley leaves, to garnish
  • Butter – 25 gms

Preparation Method

    Preparation Time - 15 minutes + draining | Cooking Time - 17 minutes

    Microwave Setting - Full 100%

  1. Place the butter, onion, yellow pepper, fennel, potato, carrot, cauliflower, garlic, parsley and tomato purée in a large bowl, and cook, covered, for 12 minutes, stirring after 4 and 8 minutes.
  2. Sprinkle over the flour and stir it into the vegetables, then gradually stir in the hot stock and salt and pepper to taste.
  3. Cook, uncovered, for 5 minutes, stirring once halfway through cooking.
  4. Garnish and serve.
