Western Baked Potatoes Recipe

Ingredients

  • Potatoes, scrubbed – 4 x 250 gms
  • Corned beef, cubed – 100 gms
  • Can barbecue beans – 1 x 450 gms
  • Salt – to taste
  • Freshly ground black pepper
  • Cheddar cheese, grated – 50 gms

Preparation Method

    Preparation Time - 15 minutes | Cooking Time - 20 minutes + standing

    Microwave Setting - Full 100%

  1. Prick the potatoes with a fork and arrange on doubled paper towels, spaced apart.
  2. Cook for 10 minutes, then turn over and rearrange.
  3. Cook for 6—7 minutes. Stand for 5 minutes.
  4. Split each potato in half and scoop out the flesh. Mix with the corned beef, beans, salt and pepper.
  5. Fill this mixture into the potato skins. Sprinkle with the cheese and cook for 3—4 minutes.
