Corn Vegetable Sandwich Recipe

Ingredients

  • Sandwich bread – 4 slices
  • Butter - to apply on the slices
  • Cucumber, finely chopped – 1 TableSpoon
  • Tomatoes, finely chopped – 1 TableSpoon
  • Potatoes, boiled, peeled and finely chopped – 1 TableSpoon
  • Oil – 1 TeaSpoon
  • Capsicum, finely chopped – 1 TableSpoon
  • Onion, finely chopped – 1 TableSpoon
  • Corn pods, boiled - 1 TableSpoon
  • Cumin seeds – a pinch
  • Soya sauce – 1 TeaSpoon
  • Salt and Pepper – to taste
  • Tomato Ketchup – to serve
  • Mayonnaise – as required

Preparation Method

  1. Butter the breads and keep aside.
  2. Heat oil in a pan. Add the cumin seeds and let them crackle.
  3. Add the onions and let them sauté till they turn pink.
  4. Add the capsicum and cook for a minute.
  5. Add the other vegetables and cook for 2 minutes on medium flame.
  6. Add the remaining ingredients and mix well and cook for a minute.
  7. Spoon the filling and spread evenly on 2 slices of bread.
  8. Spread mayonnaise, if using.
  9. Cover with the other two slices.
  10. Grill and pack it wrapped with a foil.
