Mexican Rice Recipe

Ingredients

  • Onion, finely chopped - 1
  • Garlic, finely chopped – 5-6 cloves
  • Kidney beans, boiled – 100 gms
  • Tomatoes, chopped – 50 gms
  • Water or vegetable stock – 2 cups
  • Rice, cooked – 1½ cup
  • Olive oil – ½ TableSpoon
  • Mixed herbs – 1 TableSpoon
  • Beans, chopped – ¼ cup
  • Carrot, chopped – ¼ cup
  • Capsicum,(mixed, red yellow and green) chopped – ¼ cup
  • Ginger-Garlic Paste – 2 TeaSpoon
  • Ginger, chopped – 1 TableSpoon
  • Salt to taste

Preparation Method

  1. Heat the oil in a pan.
  2. Add the onions and sauté till they turn to light brown in colour.
  3. Now add the garlic and ginger and sauté for another minute.
  4. Add all the vegetables except capsicum and tomatoes and salt and cook till the vegetables are done.
  5. Now add capsicum, kidney beans and the paste and stir well.
  6. Add the rice and the remaining ingredients and cook for another 2 minutes and transfer to the serving bowl.
  7. Garnish with chopped celery and pack.
